Chicken Rice, also known as Hainanese chicken rice, is a dish that was adapted from the early Chinese immigrants.
These immigrants were originally from a province in southern China called Hainan. Their recipe, called Wenchang chicken, was made of a variety of small chicken.
The chicken was served over the rice. It was accompanied with chili sauce, some ginger and also a garlic-infused oyster sauce.
The recipe changed a little bit thanks to the cantonese influence who started using white cut chicken, way more tender.
Do not be surprise if the the meat is served cold because the chefs are poaching the entire chicken in freezing water. The goal is to create a thick jelly layer around the chicken.
Regarding the rice, it must be very tasty. Each chef has his own way to make it but there is a common goal. Whatever ingredients you use, make sure your rice is tasty enough to be eaten on its own!
